I have friend who is allergic to all grains except rice. Is there any beer solely made from rice?

Don; Many beers, including numerous Japanese brands and the self-proclaimed "King of Beers," use rice in their brewing formulation. Only one commercial beer style, however, uses rice exclusively: sake. I suggest that you tell your friend to try some of the many different types of sake available on the market -- I personally enjoy the unfiltered variety -- and see what he likes. Oh, and by the way, sake is often served cold, not hot.

Question - can I use beer to enhance the taste of a meat based tomato pasta sauce and what type or types would you recommend. I really like experimenting so I willing to try different ones. Also, any general ideas on how to use it or when to add it in the preparation of the sauce?

Gord; A lot of people will use pretty much any good beer to add flavour and liquid to their pasta sauce, and that is just fine. Personally, however, I like to use something full-bodied to add extra flavour and create a deeper colour, such as a rich Scottish-style ale or a stout.

My advice would be to use the beer to deglaze the pan after cooking the meat and then add it as needed as the sauce simmers on the burner for a few hours. Also, if you would like to experiment with a really different flavour, try a smoked beer and maybe a dash of bourbon or Islay whiskey in your sauce.

David; Thanks for the compliment. Our reasons for going to Portugal were really quite simple: sun, sand and fresh fish hot off the grill. Need I say more?
