In reviewing A Taste for Beer, one critic wrote that the inclusion of recipes from all across North America gave one pause to consider that perhaps an entire cookbook could be culled from the kitchens of the continent's finest brewpubs. I agreed, and so began work on the Brewpub Cookbook.In preparing this book, I felt that one of the most important factors, right behind the quality of the recipes, would be the quality of the brewpubs. So I did some trekking around the continent to areas I had not as yet frequented and came up with a list of about forty of what I counted as among the best brewpubs in the land, each of which I asked for recipes. Eventually, that selection of brewpubs was culled down to thirty and the 150 or so recipes they provided scaled back to a little over one hundred, and then the real work began.
Each of the recipes included in the Brewpub Cookbook had to be tested in my own kitchen, and while Christine and I ate very well through the kitchen-testing period, the running around for ingredients, adjusting of restaurant-sized yields and testing and retesting of the dishes made the time as stressful as it was fun. In the end, though, I felt that it was all well worth the effort.
Also included in the Brewpub Cookbook are beer matches for each dish, profiles on each of the brewpubs and the now-almost obligatory beer style section. All told, I think that it makes for a cookbook that is both readable in the study and useful in the kitchen.
