Brian Morin's Beer Cuisine

Chocolate and Trappist Ale Fondue

April 12, 2003 -- Finish any special occasion with this indulgent, sinful fondue. The secret to the perfect flavour balance is to ensure that the Trappist Ale is a little sweeter than the bitter chocolate.

1¼ cup (300mL) 35% Cream
2 tbsp. (30mL) Butter

1 lb. (450g.) Semi Sweet Dark Chocolate

10 oz. (300mL) Trappist Strong Golden Ale

Strawberries
Pineapple Chunks
Banana Chunks
Orange Segments
Lady Finger


Broil cream and butter together. Chop chocolate very fine. Pour boiling cream mixture over chocolate. Slowly stir the Trappist Ale until the correct dipping consistency is achieved. Serve chocolate mixture warm in a fondue pot. Dip fruit and lady fingers into fondue mixture. Enjoy.

Serves 10
