To whet your appetite for more, here is a recipe that didn't make it into the book, mainly because it is one of my own and so obviously does not come from a brewpub. I hope you enjoy it, and if you are new to SBWoB, please visit some of the recent back issues for more delectable dishes.
The aroma of the maple really comes through as these pancakes sizzle on the griddle! Beermate: Cooked to a golden brown and topped with real maple syrup, nothing but a sweet maple beer could possibly complement these pancakes. Try the Niagara Falls Maple Wheat or the Tommyknocker Maple Nut Brown Ale. Before You Begin: There seems to be a steadily increasing number of maple beers on the market, but not all are created equal. Make sure that the one you use for this recipe has plenty of true maple flavour.
In a large bowl, combine the flour, baking powder and baking soda. Form a well in the middle. In a separate bowl, lightly beat the eggs. Add all of the remaining ingredients and mix well. Pour the wet ingredients into the well in the centre of the dry ingredients and mix the two together, taking the flour mixture from the side a little at a time. Heat a large pan or griddle to medium and grease lightly with butter. Cook pancakes until golden brown and store in a warm oven until ready to eat. Top with butter (if desired) and real maple syrup. Makes 12-14 four inch pancakes.
