The Birria Quesadilla Experience
Experience the fusion of history and flavor with our new menu item – the Birria Quesadilla. This dish is a culinary journey that began in the state of Jalisco, Mexico, where Birria was first served by the Conquistadors in 1519. Originally the Conquistadors served Birria as a goat beef stew marinated in adobo vinegar and seasoned with a variety of spices. Since then, Birria has evolved over the centuries, with variations including birria with consommé, birria with tortilla and beer, and birria pot. In 1950, this dish was reinvented at a taco stand in Tijuana, leading to the creation of the Quesabirria.
At WOB Bar & Kitchen, we’ve embraced this authentic dish and introduced The Birria Quesadilla. Our rendition features tender beef brisket, mozzarella cheese, diced red onion, and fresh cilantro, all tucked inside a corn and flour blend tortilla and seared to crispy perfection. Each order is served with a side of house-made spicy beef consommé for an added flavor kick. Available in half or full portions, the Birria Quesadilla is perfect for sharing or indulging on your own.
