WOB Bite of the Month: Baked Spinach & Artichoke Dip

Have you tried WOB’s Baked Spinach and Artichoke Dip? I am sure you are saying “how original, we can get that anywhere”…WRONG! Our Spinach & Artichoke Dip is the stuff dreams are made of. We would never serve you up a microwaved frozen hockey puck, slathered in cheese like you might be used to getting.

We make our Spinach & Artichoke dip fresh in house. We start by sautéing fresh spinach with olive oil and chopped garlic. We blend half of the spinach up with cream cheese, grated parmesan cheese, garlic powder and other seasonings, until it turns a vibrant green color. That’s right, its green because its fresh! We then fold in the remaining spinach alongside chopped artichoke hearts. We spoon it into a cast iron pan, top it with artichoke hearts with more grated parmesan cheese and then bake it to perfection. Being that this is made with so much love, we cannot just serve it up with tortilla chips, so instead we serve it aside some char-grilled multigrain artisan bread.

Come on in and give it a try! You will thank us later. The Spinach & Artichoke dip pairs seamlessly with a Saison, commonly called farmhouse ales. These beers are gold to light amber in color and are often bottle-conditioned, with some yeast character and high carbonation and just the right amount of hops. Saisons typically range between an ABV of 4.4–8.4%, though at times can reach 10%.
